We have crafted three distinctive combinations: a creamy pizza bianca with earthy mushrooms, a sweet-and-savory masterpiece of caramelized pear and gorgonzola, and a fiery finish with nduja and hot honey.

Step 1:
Fire up the Keveri H1 in Pizza Mode, as instructed in the manual or the masterclass videos available on our website.
Step 2:
While the H1 heats up, get your toppings ready. Slice the pear just under 1/2 inch thick and cut the pancetta or bacon into strips. Arrange the pears and pancetta/bacon in a cast-iron skillet. Drizzle the mushrooms with olive oil and season with salt and pepper, then place them directly on the H1's bottom rack, while the skillet goes on the top rack. Let everything cook for about 2 minutes, then remove from the H1 and set aside.
Step 3:
Cut the oyster and shiitake mushrooms into slices. Now we have all the toppings ready to start assembling the pizzas.
Step 4:
We will begin by stretching the pizza doughs; you can see how to do it in the recipe video. If you need the pizza dough recipe, you can find it at this link on our blog. We will assemble all our pizzas and then take them to the H1.
Step 5:
Once the dough is stretched, transfer it to the pizza pan and start assembling the mushroom pizza. Spread a layer of ricotta as the base, sprinkle with grated Pecorino, and scatter small pieces of the fresh mozzarella. Finish by adding the mushrooms.
Step 6:
Next, we'll assemble the pear and pancetta/bacon pizza. Place the stretched dough on the pizza pan, spread the mozzarella as the base, then layer the pear slices and chunks of Gorgonzola. Top with the crispy pancetta/bacon and finish with a light sprinkle of Pecorino.
Step 7:
Finally, it's time to assemble the 'nduja pizza. Spread a layer of tomato sauce over the dough, then scatter small pieces of the 'nduja evenly across the pizza. Add a few basil leaves and place the whole mozzarella in the center. Finish by distributing the cherry tomatoes all over for a burst of color and flavor.
Step 8:
Place each pizza on the H1's top rack and cook for 2 minutes. We recommend cooking one at a time to ensure perfect timing. Serve each pizza at its ideal temperature.
To finish, once the pizzas are out of the H1, top the pear pizza with chopped walnuts, drizzle the mushroom pizza with a touch of balsamic glaze and crown the 'nduja pizza with your favorite hot honey. These final touches will enhance the flavors of each pizza.
