Imagine making a complete gourmet dinner: Fresh-baked homemade pita, juicy pork, and bright, fresh sauces in just 10 minutes. That's what the Keveri H Mini can do. This time, we're going to cook in Baker Mode that's around 480-500° Fahrenheit.

Serves from 4 to 6 portions

INGREDIENTS

  • Classic pizza dough balls, about 2 oz each.
  • Pork steaks
  • Dry Indian spice rub like Garam Masala (or any spice blend you like).
  • Cucumber
  • Cherry tomatoes
  • Cilantro
  • Onion
  • Garlic
  • Orange juice
  • Olive oil
  • Salt
  • Pepper.
  • Yoghurt
  • Grated cucumber
  • Grated garlic
  • Lemon juice
  • Lemon zest
  • Olive oil
  • Salt
  • Pepper

PREPARATION

Paso 1

The secret to thin, golden, pita-style bread is high heat. Start by firing up your Keveri H Mini in Baker Mode, that's around 480-500° Fahrenheit. That's the sweet spot for baking pitas.

Paso 2

For classic pizza dough balls (about 2 oz each), you've got two options:

On the H Mini Stone:

The dough bakes in just 1 minute per side.

Right on the grate:

If you'd rather cook straight over the coals, place the dough directly on the grate. In 1 minute on one side and 30 seconds on the other, it rises and puffs up into seriously delicious bread.

Paso 3

While the oven does its thing, whip up two Greek-inspired sides for the perfect contrast:

Make a fresh salad:

Chop the cucumber, tomatoes, cilantro, onion, and garlic. Then add a splash of orange juice, plus olive oil, salt, and pepper.

Mix the yogurt sauce:

Stir Greek yogurt together with grated cucumber, lemon zest, grated garlic, lemon juice, olive oil, salt, and pepper.

Paso 4

While the Keveri H Mini is still hot, grab a pork steak, a ribeye chop or Boston butt steak, and season it however you like. We went with a dry Indian spice rub like Garam Masala. Place the pork on the grill rack in the bottom position. It only needs 3 minutes per side on the grill to come out golden brown and incredibly juicy.

Paso 5

Split open your pitas fresh from the Keveri H Mini and load them up with slices of grilled pork, fresh salad, and a generous drizzle of yogurt sauce.

With every bite, the pork is incredibly tender and juicy, while the Greek-inspired sauces bring a bright freshness that balances the warmth of the just-baked bread. It's a restaurant-worthy mix of flavors and textures, ready in under 10 minutes from start to finish.

CHEF'S NOTE

Start checking the dough at around 45 seconds per side. The high heat makes it cook fast. The H Mini Stone gives you that classic pita puff, while baking right on the grate delivers amazing smoky flavour.
