This recipe will be your great ally for those midweek gatherings when time is scarce, yet the company is cherished. A testament to the fact that a splendid barbecue isn't necessarily a lengthy preparation. It's a reminder that the art of cooking with fire and hosting lies not in hours spent in the kitchen but in the joy of shared moments around the grill.
We challenged Antonio, our Co-founder, and Inventor – to show us a recipe where tradition, high-temperature cooking, and skills converge to create a great experience, different from what you’re familiar with. Keveri H1 helps you create new flavors, and remember, a memorable barbecue is within reach, even on the busiest of days.
INGREDIENTS
1 skirt steak
1 pork loin
5 chistorras
3 pizza dough
3 tbs. mustard
1 orange
1 cup olive oil
1 sprig of parsley
2 tbs. of oregano
Salt
Pepper
SUPPLIES
3lb Natural Briquettes or Lump Charcoal.The Sizzling Pack

PREPARATION
Step 1:
Start by placing the pork on a clean cutting board. To create a butterfly cut, make a horizontal incision along the long side of the pork, cutting almost but not completely through, so it opens like a book.
Next, take a sharp knife and make diagonal cuts on both sides of the pork. These cuts will help the marinade penetrate deeper into the meat. Sprinkle a generous amount of salt evenly over both sides of the pork.
Step 2:
Start by lighting your Keveri H1 in Fast Grill Mode Mode at approximately 650°F, placing a 3-pound charcoal pyramid in the center. For more information, follow the step-by-step guide in the H1 User Manual or check out the instructional video at the end of the recipe.
Step 3:
Marinate the Pork. To start, place the butterflied and salted pork into a large, resealable plastic bag or a shallow dish with raised edges to contain the marinade.
Pour the prepared marinade evenly over the pork, making sure both sides are well coated. If using a bag, seal it tightly, squeezing out excess air. If using a dish, cover it with plastic wrap.
Allow the pork to marinate in the refrigerator for at least 2 hours, or ideally, overnight for maximum flavor infusion. Turn the pork occasionally to ensure even marination.
Step 4:
For the Provençal Sauce, finely chop 1/2 cup of fresh parsley and mince 2-4 garlic cloves, adjusting to your taste. In a bowl, mix the chopped parsley and minced garlic. Continue to season with a pinch of salt and freshly ground black pepper. Drizzle in 1/4 cup of extra-virgin olive oil and add 1 tablespoon of red or white wine vinegar. Stir thoroughly to combine. Lastly, taste and adjust seasonings as needed. Allow the sauce to sit for 15 minutes to meld flavors before serving.
Step 5:
This will be a 10-minute cook. Place the chistorras on the top rack of your Keveri H1. Grill the chistorras for approximately 6 minutes, turning occasionally until they are cooked to your desired level of crispiness.
At the same time, use the bottom rack and sear the pork for 4 minutes (2 minutes per side). After the first 4 minutes, move the pork up to the top rack and continue to cook for an additional 4 minutes (2 minutes per side).
*Adjust the cooking time as needed to ensure the pork is cooked to perfection.
Place the seasoned skirt steak on the middle rack of your Keveri H1
Grill the skirt steak for approximately 4 minutes, turning sides after 2 minutes to cook evenly.
Step 6:
Take the pizza dough, stretch it a bit, and place it on the top rack of your Keveri for 2 minutes (1 minute per side).
Add olive oil, salt, and the spices you like the most.
Cook's Notes:
Be careful, the skillet will be very hot, even with a short amount of time, heat is above average in Fast Grill Mode. Always wear gloves. Feel free to add garlic, thyme, vinegar, or more orange to the marinade, and all the spices according to your taste and creativity.
