Thanksgiving is a time for gathering with family and friends, sharing stories, giving thanks, and … of course… enjoying a delicious dinner.
In the spirit of this traditional holiday meal, we made this turkey recipe, so you can take advantage of the Keveri H1’s capacity and versatility and cook not just your turkey, but also many sides.

INGREDIENTS:
Serves 6+
1 Whole turkey *In this recipe we use a Turkey of 13 LB
Ground black pepper
2 tablespoons of baking powder
⅛ cup kosher salt
SUPPLIES:
2-3 lb of lump charcoal
High-Temperature Gloves
Kitchen twine
INSTRUCTIONS:
The day before
Step 1:
Once your turkey is completely defrosted, remove the turkey's innards and store them in the fridge for the next day.
Step 2:
Pat dry the turkey skin. Mix the salt and baking powder and sprinkle it all over the turkey. Leave it to rest on a cooling rack in the fridge overnight.
The next day
Step 1:
Fire up the H1 in Classic Grill Mode at 320°F according to the manual instructions or the Masterclass video.
Step 2:
Take out the turkey from the fridge at least 1 hour and 30 minutes before grilling. Leave it at room temperature.
Step 3:
Season the turkey with black ground pepper.
Step 4:
Truss the turkey: cut a large piece of kitchen twine. Set the turkey on a flat surface, with the breast side up.
Wrap the twine around the turkey's neck bone. Then, pass the twine under the wings, then up to secure the breasts, and make a tight knot.
Then crisscross the legs, wrap with the twine to one side and then to the other of the legs. Make a tight knot, there you have the legs right in front of the breast.
Step 5:
Place the turkey into the H1 in the middle rack position, for about 2 hours and 30 minutes or until the internal temperature of the breast is 150°F and the legs is 165°F.
Step 6:
After reaching the desired internal temperature, remove the turkey from the H1.
Leave it to rest for about 20 to 30 minutes before carving it.
