Make the most of your Halloween pumpkins and get everyone in the Thanksgiving spirit with this recipe. Join me as we fire up the Keveri H1 and add a twist to your leftover pumpkins. This simple recipe will infuse those pumpkins with a smoky, rich, seasonal flavor that's sure to impress your guests.
Ingredients
Serves 4+
- 1 pumpkin
- 5-6 ounces of Swiss cheese
- 5-6 ounces of Gruyere cheese
- 5-6 ounces of Emmental cheese
- 1lb. mushrooms
- Extra virgin olive oil
- Salt & pepper
- 2 lb. bottom round roast
- 2 cloves of garlic or confit garlic if you have some.
SUPPLIES:
2-3 lb natural briquettes or lump charcoal
PREPARATION:
Step 1: Set Up - Classic Mode (350 - 390°F)
First, start by lighting your Keveri H1 in Classic Mode at 350°F according to the manual instructions or the Masterclass video.
Step 2: Prepping Your Pumpkin
So, let's begin by making a few diagonal incisions on the pumpkin to ensure the lid will be useful later if you choose to put it back on. Carve following the shape demonstrated, then remove the seeds, using a scoop or a spoon.
Once the pumpkin is prepped, add olive oil and spread it all around, ensuring it reaches every crevice. Don't go overboard with salt and pepper, as the cheese combination will already bring a salty kick to the dish. Make sure the salt and pepper are evenly distributed over the pumpkin.
Now, it's time to roast the pumpkin. Place it upside down on the bottom Grill Rack in Classic Mode and let it roast for 30 minutes. This will allow it to caramelize inside while retaining its shape.
Fast forward 30 minutes later; it's time to check on the pumpkin. You'll find it beautifully caramelized and tender. Scrape out the desired amount for your preparation, keeping the cheese flavors in mind.
Step 3: Make the Cheese Blend
We're using Swiss cheese, elemental, and gruyere. Cut them into pieces for easy melting. In addition, add garlic (a garlic confit for extra flavor), a dash of nutmeg, and some salt and pepper. Finally, include white wine and a touch of whiskey for that special kick.
Step 4: Bottom Round Roast and Final Touches
With everything prepared, combine it with the roasted pumpkin, ensuring a balance of tenderness and texture in your dip. The final touch is to cook the fondue inside the H1 with the round roast, grill the meat to perfection, and add in the mushrooms. In about 15 minutes take the meat out to rest and while it's resting, stir your amazing cheese and pumpkin mixture.

For an extra layer of flavor and a unique twist, consider adding a sprinkle of fresh herbs like thyme, rosemary, or sage to the pumpkin and mushroom mix. The aromatic infusion of these herbs complements the richness of the cheese blend and brings delightful freshness to each bite.
