New York Style Pizza

The origins of the New Style pizza trace back to the XX century, when Italian immigrants bring their traditions to the US. Nowadays this pizza is well-known for its foldable slice with a crispy crust. Fire up your Keveri H1 to enjoy this pizza style with your friends.

 

Serves 3 pizzas

640 g Bread flour
15 g Sugar
10 g salt
10 g Instant yeast
415 g lukewarm water
45 ml olive oil
250 ml Tomato sauce
500 g grated mozzarella cheese


SUPPLIES:

6 LB Lump charcoal

PREPARATION:

The day before

 Step 1:

In a bowl, mix the flour, sugar, and instant yeast.


Step 2:

Add the water and the olive oil. Knead with your hands or a stand mixer (should have a hook dough for kneading) for a few minutes until the dough feels soft and well combined.


Step 3:

Place some flour over the countertop, transfer the dough, and knead with your hands for a few minutes.

Step 4:

Divide the whole dough into 3 small balls (equal size). Let each ball of dough rest in a bowl covered with plastic film or in a zip-loc bag in the fridge overnight.

*The bowl should be big enough to let the dough grow properly.

 

Next day:


Step 1:

Fire up the H1 in Fast Grill Mode at 630°F  according to the manual instructions or the Masterclass video. 


Step 2:

At least 2 hours before baking, remove the dough from the fridge and put each dough in a separate bowl covered with plastic film at room temperature until it duplicates their size.

Step 3:

When the dough reaches the appropriate size, set on the countertop. With your hands gently start making the shape, leaving a crust. Stretch the dough until you have an 11-inch pizza.

Step 4:

With a paper towel, spread some olive oil on the pizza pan. Transfer the dough to the pan, distribute a uniform amount of tomato sauce in the center of the dough, and finally add the cheese.

Step 5:

Place the pizza in the top rack position of the H1 for about 6 minutes.

 

Cook's Notes:

Although the traditional ingredients of a New York-style pizza are tomato sauce and mozzarella, let your imagination run wild and try different toppings, like pepperoni, dry tomatoes, blue cheese, etc
