After a great Christmas dinner, there's that extra bit of time when the main course has been enjoyed and the urge for a dessert kicks in. This is where the Keveri H1 comes into play. Enter the braided cinnamon bread, a dessert with the essence of the traditional Christmas flavors but perfectly charred and accompanied by smoked caramelized oranges and berries for that extra sweet smoky note.
Despite its simplicity in ingredients and straightforward process, what sets it apart is the unique touch of being baked over fire. It’s a classic addition to any table, promising to be a crowd-pleaser while adding a cozy, friendly feel to your holiday gathering.
Ingredients
Serves 8+
For the dough
8 tbsp active dry yeast1/3 cup warm water
1/2 cup warm milk
1/4 cup unsalted butter, melted
2 egg yolks
2 3/4 cups all-purpose flour
1/4 cup granulated sugar
For the filling
1 tsp salt1/2 cup unsalted butter, at room temperature
1/2 cup brown sugar
1 tbsp cinnamon

Preparation:
Step 1:
Let's start by making the dough. Begin by mixing the yeast with warm water and let it sit for 10 minutes until it becomes frothy. Meanwhile, whisk warm milk with melted butter and egg yolks, then add flour, sugar, and salt.
Next, add the yeast to the dough and beat at medium speed until the dough becomes smooth and cleanly separates from the sides, for about 4 to 6 minutes. Once ready, transfer it to a lightly greased bowl and gently cover it with a damp kitchen cloth. Let it rest for 1 hour until the dough doubles in size.
Step 2:
Set Up - Classic Mode (350 - 390°F). First, start by lighting your Keveri H1 in Classic Mode at 350°F according to the manual instructions or the Masterclass video.
While you're getting the charcoal oven ready, roll out the dough on a lightly floured surface into a rectangle, trimming the edges if necessary. Then, evenly spread the butter over the dough, making sure it reaches the edges.
Step 3:
Now, let's move on to the filling. In a bowl, mix together the cinnamon, brown sugar, and salt. Then, uniformly sprinkle the filling over the dough. With the long edge facing you, tightly roll up the dough.
Step 4:
Now that the dough is rolled up, using a sharp knife, cut it lengthwise down the middle. Then, firmly intertwine the two pieces, ensuring the cut sides are exposed.
Step 5:
Gently transfer it to previously oiled pizza racks. Then, in a small bowl, mix one egg with 15 ml of water and brush the dough with this mixture. Shape it into a sort of crown, firmly pressing the egg-brushed end underneath the other end to seal it. Cover it with the same damp kitchen cloth and let it rise until it doubles in size, approximately 1 hour.
Step 6:
Bake for about 35 to 40 minutes or until the dough turns golden brown. Let it cool, decorate, and sprinkle with powdered sugar. Now, it's time to enjoy the best part of the meal!
Cook's Note:
Enhance your dessert with caramelized oranges, nuts, or chocolate chips for an incredible flavor boost. The smoky notes create a unique contrast of flavors.
As for caramelized oranges, grilling or roasting them in a charcoal oven intensifies their natural flavor bringing out their sweetness with a subtle smoky edge. This is a great topping idea. Feel free to get creative and make it your own!
